Get Your Lentil On
If you’re looking for a delicious and super easy salad to make – look no further. This lentil salad recipe is a game changer. Not only is it quick and easy to make, but it’s also filled with ingredients that your body will love. It’s the perfect summer salad to take to the park for a picnic, or to make for a lunch date with your mate.
1/2 lb lentils (IMPORTANT: save yourself some time and effort and buy pre-steamed lentils. Trader Joe’s sells them and they are delicious.)
1/2 c diced carrots
1/2 diced celery stalk
1/4 chopped red bell pepper
2 chopped parsley sprigs
2 Tbsp chopped yellow onion (I bought pre-chopped onion to save on time)
1 Tbsp red wine vinegar
1/2 Tbsp olive oil
1/2 c feta cheese crumbles (To make it healthier, buy the fat free feta cheese)
Freshly ground pepper and salt to taste
Because you’re going to buy the precooked lentils, you get to skip the whole cooking the lentils for 30 minutes part.
Prepare the salad: Add the lentils, carrots, bell pepper, celery, parsley and onion together. Then you’ll want to add in the vinegar and olive oil.
Add in the feta cheese for the final touches.
Season it with as much salt and pepper as you would like. After everything is mixed together, I suggest letting it sit in the refrigerator overnight. It tastes much better after the flavors soak together. If you’re in a time crunch, that’s okay – the salad is ready to go after you make it!
This recipe is for 2 servings, so feel free to double the recipe for a bigger party.
