Crazy for Quinoa
Not only is quinoa a superfood, but it’s super delicious. It’s packed with protein, fiber and yummy goodness. What I love most about quinoa, is that you can dress it up and dress it down. There are a million quinoa salad recipes, so when I find an interesting and unique one, I jump on it. Here is my favorite quinoa salad recipe brought to you by Trader Joe’s.
Tropical Quinoa Salad
What You Need
1 Bag of Tricolor Quinoa (You only need 1 dry cup)
1 Bag of Wild Arugula (Make your life easier and buy it already washed)
1 Container of Crumbled Feta (I used Fat Free and it’s just as delicious)
1 Container of Tropical Mango Pineapple Salsa
1 Package of Chicken-less Crispy Tenders
What You Do
Cook the quinoa according to the package. You only need to use 1 dry cup. Using a rice-cooker is a very easy and fast way to cook the quinoa.
While this is cooking, place your chicken-less tenders on a baking sheet, and place in the oven (follow instructions on the bag). Once the chicken-less tenders are finished cooking, cut them into pieces. Toss them into a bowl with the cooked quinoa, arugula, and the feta cheese. Use the salsa as the dressing and you can use as much or as little of it as you want. Now enjoy!
